The olive trees are grown in the Rif Mountains without the use of fertilizers or pesticides. The small scale farmers do not use irrigation systems that can deplete local water resources or cause soil erosion; instead, they rely on the annual rainfall.
The small farmers selectively hand-pick the olives and take them straight to the local mill to be first cold pressed.
